Katz's Delicatessen

The Lower East Side pastrami temple that turned a sandwich counter into New York legend.

Katz’s opened in 1888. It still runs on tickets, steam, and a line that rarely dies. This is not fine dining. It is New York appetite at full volume.

Why it matters

Pastrami here is the reference point. Hand-cut. Piled high. Served on rye with mustard that does not apologize. Tourists come for the movie booth. Locals come because the meat still holds.

The room is fluorescent and loud. That is part of the product. Flavor Players cares about places that set a standard other kitchens get measured against. Katz’s set the deli standard for a century-plus.

What to notice

  • The cutter’s hand decides your sandwich more than any menu copy
  • Fat and smoke carry the flavor; lean meat alone tastes thin
  • A classic plate needs almost no garnish — bread, mustard, pickle
